Holy moly.. Unfortunately I don't remember where I saw the idea for this, but it was pretty comparable to the thin mint cookies you buy from girl scouts. It's was pretty easy, although a little annoying trying to get them covered in chocolate.
Here is what I used..
A sleeve of Ritz crackers (I used generic)
8oz milk chocolate (I'm sure you could use dark chocolate too)
1tbsp peppermint extract
1 tbsp Crisco
I melted the milk chocolate in the microwave (and added a tsp of Crisco, since I know from experience once I added the peppermint extract the chocolate would get thicker) then dipped the Ritz in the chocolate. To speed the process up I put a pan in the freezer to get cold, put some wax paper down and plunked the melted crackers on that, it made them harden pretty fast. I loved them, they tasted like Thin Mints, but a heck of a lot cheaper! (and no preservatives!) They lasted quite a while in the fridge in some Tupperware too.
